[RecipesAndMore] Turkey and Broccoli Casserole

Turkey and Broccoli Casserole

8 ounces mushrooms
2 tablespoons butter
1 can (10 3/4 ounces) mushroom soup condenced
1/3 cup mayonnaise
3 tablespoons milk
1 tablespoon prepared mustard
1/4 teaspoon black pepper
4 cups diced cooked turkey
16 ounces frozen cut broccoli
1 cup shredded American cheese
1/4 cup toasted almonds*, optional

Spray inside of crockpot with cooking spray or lightly grease with butter.

In a skillet over medium low heat, sauteacute; sliced mushrooms in butter 
until 
tender. In crockpot, combine mushrooms, soup, mayonnaise, milk, mustard, and 
pepper. Stir in diced turkey and broccoli. Cover and cook on LOW setting for 5 
hours. Stir in cheese; cover and cook 30 minutes longer. Sprinkle with toasted 
almonds, if desired, just before serving.  Serves 6.

Mandarin Orange Cake
 
2 c. self-rising flour
1 3/4 c. granulated sugar
2 cans (15 oz.) each mandarin oranges, drained
2 eggs
3/4 c. packed brown sugar
3 Tbsp. butter
3 Tbsp. milk
 
Preheat oven to 350 degrees F.  Lightly grease 13X9X2 inch baking
pan.  In large mixing bowl, beat flour, sugar, oranges, and eggs with
electric mixer on medium speed until well combined.  Spread mixture
evenly into prepared pan.  Bake about 30 minuts or until wooden
toothpick inserted near center comes out clean.  Meanwhile, in small
saucepan heat and stir brown sugar, butter, and milk over medium heat
until mixture boils.  When cake is done, drizzle brown sugar mixture
evenly over cake.  Cool at least 30 minutes before serving.  Makes
16 servings.

4 medium cubed steaks
salt
pepper
2 Tbsp. vegetable oil
2-3 c. frozen crinkles french fries or steak fries
1 medium onion, thinly sliced
1 can (10 3/4 oz.) cream of mushroom soup
1/2 c. milk
 
Preheat oven to 350 degrees F.  Combine flour and salt and pepper to
taste.  Coat steaks with flour mixture, shaking off excess.  In
large skillet, quickly brown steaks on both sides in hot oil.  Place
potatoes and onion in 3 quart rectangular baking dish.  Top with
steaks.  In small bowl, combine soup and milk.  Pour over steaks and
vegetables.  Tightly cover with foil.  Bake about 1 hour or until
steaks and onions are tender.  Serves 4.

  Ashlee had her visit in Iowa City yesterday and this is what we found out

  New X-rays show that she will have to have 2 teeth removed. One of them is a 
tooth not in yet, but too far down in the cleft area. The other one is a baby 
tooth that is just in the way right now. Doc said the bone graft can be done on 
Bone and Bone but not on the root of a tooth. So our next trip to Iowa City 
will be a meeting with the Oral Surgeon, then he will set us up for the removal 
of the 2 two teeth. She has to heal for 6 weeks then we take her back for the 
Bone Graft, they are looking at around the first part of Aug. now for the Bone 
surgery. She will heal another 6 weeks then we take her back to her 
Orthodontist in Iowa City on Dec.3 for new X-rays to make sure the bone has 
healed right. Long process,that SHOULD have been done in Omaha.IF they had done 
this back when she was 6 or 7 the adult tooth they are having to remove now 
would not have to be removed cause it would not be in the defected area.
  When she is 18 or so,, then she will need a faux tooth put in the place where 
this one is being remove. Doc says her eye tooth will help fill in some of the 
gap she will have till all her adult teeth are in and then she will have braces 
for just the top 6 teeth. Gonna be a long year for her. At least she will be 
able to play ball this Summer,, but Soccer will be out for her. When they do 
the Bone Graft in Aug. They take it from her pelvis bone,which is why 6 weeks 
of healing is needed. For now I need all the Prayers of strength for Ashlee she 
is so scared. I pray it gets easier for her as she gets older.

Quick Apple-Pecan Waffle
 Makes 1 waffle 
This super-easy, super-delicious waffle is one of my favorites. Did you
know that research has shown that ordinary cinnamon is anything but? It
can control blood pressure and blood sugar, so sprinkle away! 
Ingredients:
1 whole-grain low-fat frozen toaster waffle
1/4 cup unsweetened applesauce
1/3 cup light vanilla yogurt
2 tablespoons coarsely chopped pecans
Pinch of ground cinnamon
To Make:
Toast the waffle and transfer to a plate. Spread with the applesauce and
spoon the yogurt on top. Sprinkle with the pecans and dust with
cinnamon. Eat right away

Stir-Fried Beef Tidbits
1-1/2 pounds Sirloin Steak
2 teaspoons olive oil
1 clove garlic (minced)
1 teaspoon vinegar
1/8 teaspoon each - salt and pepper
2 onions, sliced thin
2 large tomatoes 
Trim any fat from steak and cut into small, thin pieces.
Heat wok; add oil and garlic; cook until garlic is golden. 
Add steak, vinegar, salt and pepper. Stir-fry for about 
6 minutes; stir continuously. When beef is turning brown, 
add onion and tomato. Cook until onion is transparent; 
about two minutes. Serve immediately with boiled potatoes 
or white rice. If you like crunchies, sprinkle some Chinese 
noodles over top.

8 oz. linguine, uncooked
3 cups broccoli florets
3 medium carrots, peeled, sliced (about 2 cups)
2 tsp. oil
1 lb. beef sirloin steak, cut into strips
1/4 cup Kraft Zesty Italian Dressing
1/4 cup teriyaki sauce
1 tsp. ground ginger
COOK pasta as directed on package, adding broccoli and carrots to the
cooking water for the last 2 min. of the pasta cooking time. Drain
pasta mixture.
MEANWHILE, heat oil in large nonstick skillet. Add meat; cook until
browned on all sides, stirring occasionally. Stir in dressing, teriyaki
sauce and ginger; cook until sauce thickens, stirring occasionally.
TOSS pasta and meat mixtures in large serving bowl.
4 servings, 2 cups each
TIPS:
Flavor Boost: For added crunch, sprinkle with 1/2 cup PLANTERS Dry
Roasted Peanuts just before serving.
Flavor Boost: Substitute 1 Tbsp. freshly grated gingerroot for the
ground ginger.

Ever get tired of the same ole hash browns? How about
doctoring them up with some new ideas.
1. Toss hash browns with corn, diced red pepper, minced jalapeno
peppers and garlic. Top with guacamole or salsa.
2.Add chopped red pepper, minced garlic, chopped fresh sage leaves and
ground black pepper to hash browns.
3.Add chopped onions, diced red and green peppers and red pepper flakes
to hash browns.
Now, if you'll excuse me, I'm going to do another experiment with hash
browns for breakfast. Hope you enjoy these different ideas to spike up
hash browns

Strawberry Short Cake Cake

1 cup miniature marshmallows
2 cups frozen strawberries in syrup
1 3 ounce package strawberry Jello
1 package white cake mix with pudding in the mix
1 cup water
1/2 cup oil
2 eggs

Grease a 9 by 13 inch pan. Sprinkle marshmallows evenly over bottom. Combine
strawberries and syrup with dry Jello. Set aside. In large bowl combine cake
mix, water, oil and eggs. Blend at low speed until moistened. Beat 2 minutes
on high speed. Pour batter evenly over marshmallows in pan. Spoon strawberry
mixture over batter evenly. Bake at 350 degrees 35 to 45 minutes or until
tooth pick inserted in the center comes out clean. Serve with ice cream or
whipped cream.

Beefy Macaroni and Cheese


1 1/2 pounds lean ground beef
1 medium onion, chopped
1 envelope cheese sauce mix
1/4 cup water
1 can cream of mushroom or cream of chicken soup
1 can stewed tomatoes (15 oz)
2 tablespoons tomato paste
1 cup shredded cheddar cheese
8 ounces macaroni, cooked just until tender

Brown ground beef and onions. Combine all ingredients, except shredded

Baked Pineapple
1 #2 can crushed pineapple, undrained
2 Tbsps flour
1/4 cup sugar
3 eggs beaten
3 slices bread, cubed
1 Tbsp sugar  1 tablespoon cinnamon, mixed
3 Tbsps butter or margarine

Lightly grease pan. Mix pineapple, flour and sugar. Beat eggs and lightly
add to the pineapple mixture. Pour into greased pan. Place bread cubes on
top. Melt butter and pour over bread. Sprinkle with cinnamon  sugar. Bake
at 350 degrees - 45 minutes.

Veal Scaloppine with Gorgonzola Sauce 
  =
    1 cup beef stock or canned beef broth
    1 cup chicken stock or canned low-salt chicken broth
    1 pound veal scaloppine
    All purpose flour
    3 tablespoons (about) olive oil 
    1 cup whipping cream
    3/4 cup chopped seeded plum tomatoes
    6 tablespoons chopped fresh basil
    1 tablespoon tomato paste
    2/3 cup crumbled Gorgonzola cheese
  Boil both stocks in medium saucepan until reduced to 1 cup, about 
10 minutes. Remove from heat.
  Sprinkle veal with salt and pepper. Dredge veal in flour to coat;
shake off excess. Heat 1 tablespoon oil in heavy large skillet over
high heat. Working in batches, add veal and saute until cooked 
through, about 2 minutes per side. Transfer veal to platter; tent
with foil to keep warm. Repeat with remaining veal, adding more oil
to skillet as necessary.
  Add reduced stock mixture, cream, 1/2 cup chopped tomatoes, 
4 tablespoons basil and tomato paste to skillet. Simmer until
reduced to sauce consistency, whisking frequently, about 5 minutes.
Add 1/3 cup Gorgonzola; stir until melted.
  Pour sauce over veal. Sprinkle with remaining 1/4 cup chopped 
tomatoes, 2 tablespoons basil and 1/3 cup Gorgonzola.

Ruby Tuesday*s Chicken Quesadillas

    5 oz. chicken breast 
    Italian Dressing 
    12 inch flour tortilla 
    margarine 
    1 cup shredded monterey jack/cheddar cheese 
    1 Tablespoon tomatoes, diced 
    1 Tablespoon jalapeno peppers, diced 
    Cajun Seasoning (to taste) 
    1/2 cup shredded lettuce 
    1/4 cup diced tomatoes 
    Sour Cream 
    Salsa
  Place chicken breast in a bowl with enough Italian dressing to 
coat; allow to marinate 30 minutes, refrigerated. Grill marinated 
chicken until done in a lightly oiled pan. Cut into 3/4 pieces 
and set aside. 
  Brush one side of tortilla with margarine and place in frying pan 
over medium heat. On one half of tortilla, add cheese, 
1 Tbls. tomatoes, peppers, and Cajun seasoning in that order. Make 
sure to spread to the edge of the half. Top with diced chicken, 
fold empty tortilla side on top, and flip over in pan so that 
cheese is on top of chicken. Cook until very warm throughout. 
Remove from pan to serving plate and cut into six equal wedges 
on one side of plate. On the other side put lettuce, topped with 
1/4 cup tomatoes, and then topped with sour cream. Serve your 
favorite salsa in a small bowl on the side.

Cream of Chicken Pepperpot

    2 tablespoons kosher salt
    1 teaspoon whole peppercorns 
    3 carrots, coarsely chopped
    1 onion, coarsely chopped
    1 rib celery, coarsely chopped
    1 gallon cold water
    1 whole fryer chicken
    Oil for sauteing
    1/2 cup each: finely diced yellow, red and green bell peppers 
    1 stick butter
    1/2 cup flour
    1 pint heavy cream
    Salt and black pepper to taste
    Tabasco to taste
  Add salt, peppercorns, carrot, onion and celery to water. Bring to
a boil, reduce heat to a simmer and cook chicken until meat is 
tender, about 2 hours. Skim impurities from top of water as the
chicken cooks. When done, strain remaining stock and set aside.
Remove meat from bones and set aside.
  Saute diced bell peppers. Stir in reserved chicken. Set aside. 
  In a skillet, combine butter and flour. Cook over low heat until the
mixture is thick and golden, about 1/2 hour. To reserved stock add
cream, chicken and peppers and salt and pepper to taste. Bring to a
boil. Whisk in flour and butter mixture. Add Tabasco to taste. Simmer
until flavors meld.

    1 cup beer 
    1/4 cup unsulphured dark molasses 
    1/4 cup creamy peanut butter 
    1/4 cup Worcestershire sauce 
    1 1/2 tablespoon chili powder 
    Juice of 1 medium lime 
    1/2 teaspoon dry mustard 
    1/4 teaspoon aniseed, toasted and ground 
    1/4 teaspoon salt 
    1 1/2 dozen chicken wings 
  Preheat oven to 350F. Grease a large baking pan or dish.
  Combine everything except the wings in a large, heavy pan. Simmer 
over medium heat 15 to 20 minutes, until reduced to a thick sauce.
  While the sauce simmers, prepare the chicken wings. With a butcher
knife, remove the wing tips, then cut each wing in half at the joint.
Add the wings to the sauce, and stir to coat them. Ladle the wings
and the sauce into the baking dish. Bake for 25 minutes, then stir
the wings in the sauce.
  Turn the heat up to 425F and bake an additional 10 minutes, or until 
the sauce glazes the wings. Serve the wings hot with ranch dressing,
if desired.

Hi ya'll
  Last night about 5 or so,, Bryce and 2 of his friends were in a car wreck. 
They were going to Ames and Jake the driver was coming up to a stop sign out on 
17 and 22nd (outside of Boone) his brakes would not work, but I think they were 
on ice, but Jake told the boys brace yourselves the brakes just gave out!! 
Bryce was in the back seat (wearing his seatbelt too!) he was behind Jake. 
Bryce said he looked to the passenger side and saw an Explorer coming right at 
them.They went thru the intersection. Bryce said he grabbed the back of Jakes 
seat and held on for dear life and closed his eyes! They were hit hard on the 
passenger side where Tony was seating up front. Bryce said the impact was hard 
and he felt the car bout flip on its side,then it bounced back down. Bryce was 
pinned but not hurt, he hurt his right knee properly from the center console, 
(opposite knee from his Wrestling knee injury) Jake must of hit the window 
pretty hard. Bryce said they kept asking him questions and he was not able to 
answer them all. Tony was knocked out and pinned in pretty bad, Bryce kept 
talking to him till the ambulance and police got there.Bryce said he would moan 
then got back out again. They had to remove the top of the car (it WAS a Grand 
AM.) to get Tony out and had to life flight him to DSM. I was on my way to the 
scene but the cop told Bryce to tell me not to come, they had the whole 
intersection closed off,and that they would bring Bryce home after they were 
done. It was almost 9PM when they finally got him to me!!! I was a wreck 
waiting but I kept calling to make sure he was ok. The paramedic called to 
verify if it was ok if Bryce didn't go to the hospital, Bryce had declined to 
go cause he did feel ok. I told them that was fine, I'd take him if needed 
later. Tony came home before midnight, after some stitches, bumps and bruises 
he is ok, but doesn't remember what happen. The other people in the explorer 
where ok as well, they were from Ames not Boone. Also Bryce said after the one 
ambulance left with Jake in it, there was one that was leaving empty, it ended 
up in the ditch as well!! The roads were really slick last night, I headed into 
town, cause the cop was gonna bring Bryce to grandma Dee's. I bout put the Jeep 
in the ditch, hit the ice and bout lost it. But Tony is home and fine Bryce is 
fine as well, but not heard anything yet on Jake yet, I'm sure he is back home 
and ok too. Just scared the pissed out of all of us!
 AND THEN of all things I did! I had a pot of water going on the stove, to put 
moisture in the air,, so dry here in the house. Anyway I left here and forgot 
to shut it off. I came home course it was after 9 and it had burnt dry and 
CRACKED my stovetop right over the burner. The burner still works, but the 
glass has a crack about 10 inches long across the burner!! I wanted to kick 
myself. Don't know if it can be fixed or not,, Tim is gonna call his glass 
friend and check, but I doubt it can be fixed! So anyone with the smooth stove 
top,, NEVER let anything burn dry on it! Just checked on a replacement top,, 
More than what the stove cost!!! 600 bucks!!!

Mix cake mix with oil and the egg. Add Brickle Bits.

Cover a cookie sheet with aluminum foil and drop dough by

BROWNIE GEMS


Ingredients 1 package DUNCAN HINES® Chocolate Lover's® Double 
Fudge Brownie Mix 2 eggs 2 tablespoons water 1/3 cup vegetable 
oil 28 miniature peanut butter cup or chocolate kiss candies 1 
container of your favorite Duncan Hines frosting    
1. Preheat oven to 350°F. Spray (1-3/4-inch) mini-muffin pans 
with vegetable cooking spray or line with foil baking cups.

2. Combine brownie mix, fudge packet from mix, eggs, water and 
oil in large bowl. Stir with spoon until well blended, about 50 
strokes. Drop 1 heaping teaspoonful of batter into each muffin 
cup; top with candy. Cover candy with more batter. Bake at 350°F 
for 15 to 17 minutes.

3. Cool 5 minutes. Carefully loosen brownies from pan. Remove to 
wire racks to cool completely. Frost and decorate as desired.

Butter-Brickle Cookies

1/3 cup butter
1 box French vanilla cake mix with pudding
2 eggs
1 teaspoon vanilla extract
1 tablespoon water
1 ½ cups butter brickle bits
1 cup chopped pecans

Heat oven to 350 degrees F. Grease three cookie sheets.

With electric mixer, beat butter until creamy. Add cake mix, 
eggs,
vanilla extract and water. Beat until well-blended. Stir in 
butter
brickle bits and pecans. Dough will be very stiff.

Drop by tablespoon or melon scoop onto prepared cookie sheets. 
Bake 8
to 10 minutes or until bottoms are beginning to brown. Top will 
look

BUTTERSCOTCH BROWNIE COOKIES 1 (21-1/2 oz.) box Pillsbury Fudge 
Brownie Mix
1/2 cup flour
1/2 cup water
1/4 cup vegetable oil
1 egg
1/2 cup butterscotch morsels
3/4 cup chopped walnuts Heat oven to 350ºF. Generously Pam-spray 
2 cookie sheets. In a large bowl, mix all ingredients except 
morsels and nuts by hand until dough is formed. Stir in morsels 
and nuts. Drop by rounded measuring teaspoonsful 2-inches apart 
onto cookie sheets. Bake, 1 sheet at a time, for 8-12 minutes 
until cracked in appearance. Cool 1 minute. Remove from cookie 
sheets and cool completely. Store in plastic food storage bags. 
(Makes 3-1/2 dozen cookies)

Cake Mix Christmas Cookies
1 pkg. (18.25 oz) cake mix (chocolate, cherry, lemon) of your 
choice
2 eggs
1/2 cup shortening
1 Tbs. water
1/2 cup chopped nuts

Mix all ingredients together. Shape into 1-inch balls and roll in
powdered sugar. You may want to chill the dough before rolling.
Bake 10-12 minutes at 375.

CELEBRATION COOKIES




1 package Betty CrockerE SuperMoistE white or yellow cake mix
1/3 cup shortening
1/3 cup butter or margarine, softened
1/2 teaspoon vanilla
1 egg
1 tub Betty CrockerE Rich  Creamy ready-to-spread frosting

Heat oven to 375�F. Mix about half of the cake mix (dry) and 
remaining
ingredients except frosting in large bowl, using spoon, until 
thoroughly
mixed. Stir in remaining cake mix. Divide dough in half. Roll 
each half
1/4 inch thick on lightly floured cloth-covered board with 
cloth-covered
rolling pin. Cut dough with 2 1/2-inch bell-or heart-shaped 
cookie
cutter. Place about 1 inch apart on ungreased cookie sheet.Bake 6 
to 8
mins or just until set (centers will be soft). Remove from cookie 
sheet
to wire rack. Cool completely, about 30 mins.Decorate cookies as 
desired
with frosting.

Cherry Drop Cookies

1 (18.25 ounce) box Duncan Hines Cherry
Supreme Deluxe cake mix
1/4 cup vegetable oil
2 tablespoons water
2 eggs
Few drops red food coloring, if desired
1 cup chopped nuts
Quartered maraschino cherries

Preheat oven to 350 degrees F.

Blend cake mix, oil, water, eggs and food coloring, if desired. 
Stir in nuts. Drop from a teaspoon onto an ungreased cookie 
sheet. Top each cookie with a quarter of a maraschino cherry. 
Bake for 10 to 12 minutes. Cool on cookie sheet for about 1 
minute, then remove to rack to finish cooling.

Makes 4 to 5 dozen cookies.

1/2 cup brown sugar
3/4 cup oil
1 egg
1 cup milk chocolate chips
1 pkg. white cake mix (18.25 oz)

Preheat oven to 375. In mixing bowl, mix all ingredients together
well. With teaspoon, drop onto ungreased cookie sheet. Bake for 
10-
12 minutes or until cookie is golden brown. Cool on cookie sheet.
Makes about 5 dozen cookies.

BETTY CROCKERS CAKE MIX PEANUT BUTTER
CHOCOLATE CHIP COOKIES 

2 eggs
1/3 c. water
1/4 c. butter, softened
1 c. peanut butter
1 pkg. Betty Crocker lemon cake mix
1 (12 oz.) pkg. chocolate chips


Heat oven to 375 degrees. Beat eggs, water, butter and peanut 
butter with electric beaters and half the cake mix until light 
and fluffy. Stir in remaining cake mix and chocolate chips. Drop 
by rounded teaspoonfuls about 2 inches apart on ungreased baking 
sheet. Bake 10 to 12 minutes. Makes 6 dozen.For Peanut Butter 
Chocolate Chip Bars: Spread dough in greased and floured jelly 
roll pan, 15 1/2 x 10 1/2 x 1 inches. Bake about 25 minutes. 
Cool; cut in bars. Makes 30 bars (3x1 1/2 inches).

Chocolate Crinkle Cookies

1 chocolate cake mix with pudding or extra moist
1 large egg
2 cups non-dairy whipped topping

Preheat oven to 350 degrees F.

Mix these 3 ingredients together until completely mixed. Dough 
will be sticky.

Spray the palm of your hands with Pam and take a heaping teaspoon 
of dough and place it in your hand and roll it into a ball. Roll 
in powdered sugar. Place on Pam sprayed cookie sheet.

Bake for 8 to 10 minutes. You want the bottom to just be a light 
brown and the cookie still soft. When it cools, the cookie 
becomes chewy or bake a bit longer for a solid cookie.

Chocolate Spritz Cookies

1 package Duncan Hinds Golden Sugar Cookie Mix
1/3 cup unsweetened cocoa
1 egg
1/3 cup vegetable oil
2 tablespoons water
Preheat oven to 375 degrees.
Combine cookie mix and cocoa in large mixing bowl.  Stir until 
blended.  Add
egg, oil, and water.  Stir until thoroughly blended.
Fill cookie press with dough.  Press desired shapes 2 inches 
apart on
ungreased cookie sheet.
Bake at 375 degrees for 6 to 8 minutes, or until set.  Cool 1 
minute on
baking sheet.  Remove to cooling racks, and cool completely.

Makes 5 to 6 dozen cookie

CHOOSE A CAKE MIX COOKIES



(CHOC CHIP VERSION) approx. 7 doz

2 packages 2-layer-size yellow cake mix (with pudding in it - 
this is very important to the outcome)
2/3 cup margarine or butter, melted
2 eggs
1 12-oz package (2 cups) miniature semisweet chocolate pieces 
(can use regular - just use more)

In large mixing bowl combine cake mix, margarine, eggs, and 1/4 
cup water; mix well. (Dough will be stiff.) Stir in chocolate 
pieces. Drop by rounded tablespoons onto an ungreased cookie 
sheet. Bake at 375°F for 8 to 10 minutes or till golden. Cool 2 
minutes on cookie sheet. Remove; cool on a wire rack. Store 
cookies in airtight container.

Choose-a-Cake-Mix Cookies (variations)

Peanutty Chocolate Cookies: Prepare recipe as above, except use 
chocolate cake mix (pudding type) and stir in 2 cups of 
candy-coated milk chocolate-covered peanuts, halved.

Carrot-Raisin cookies: Prepare recipe as above, except use 
carrot-spice cake mix (pudding type) and stir in 2 cups raisins. 
Bake at 375°F about 12 minutes.

Lemon-Apricot Cookies: Prepare recipe as above, except use lemon 
cake mix (pudding type) and stir in 2 cups snipped dried 
apricots.

COCONUT CLOUDS





Ingredients 2-2/3 cups flaked coconut, divided 1 package DUNCAN 
HINES® Moist Deluxe® Classic Yellow Cake Mix 1 egg 1/2 cup 
vegetable oil 1/4 cup water 1 teaspoon almond extract    
1. Preheat oven to 350°F. Reserve 1-1/3 cups coconut in medium 
bowl.

2. Combine cake mix, egg, oil, water and almond extract in large 
bowl. Beat at low speed with electric mixer. Stir in remaining 
1-1/3 cups coconut. Drop rounded teaspoonful of dough into 
reserved coconut. Roll to cover lightly. Place on ungreased 
baking sheet. Repeat with remaining dough, placing balls 2 inches 
apart. Bake at 350°F for 10 to 12 minutes or until light golden 
brown. Cool 1 minute on baking sheets. Remove to cooling racks. 
Cool completely. Store in airtight container.

Saying Grace In A Restaurant

 

Last week, I took my children to a restaurant. 

My six-year-old son asked if he could say grace.

As we bowed our heads he said, God is good, God is great. Thank you 
for the food, and I would even thank you more if Mom gets us ice cream for 
dessert. And Liberty and justice for all! Amen! 

Along with the laughter from the other customers nearby, I heard a 
woman 
Remark, That's what's wrong with this country. Kids today don't even 
know how to pray. Asking God for ice cream! Why, I never! 

Hearing this, my son burst into tears and asked me, Did I do it wrong? 
Is 
God mad at me?

As I held him and assured him that he had done a terrific job, and God 
was certainly not mad at him, an elderly gentleman approached the table. 

He winked at my son and said, I happen to know that God thought that 
was a great prayer.

Really? my son asked.

Cross my heart, the man replied. 

Then, in a theatrical whisper, he added (indicating the woman whose 
remark had started this whole thing), Too bad she never asks God for ice 
cream. A little ice cream is good for the soul sometimes. 

Naturally, I bought my kids ice cream at the end of the meal. My son 
stared at his for a moment, and then did something I will remember the rest of 
my life.

He picked up his sundae and, without a word, walked over and placed it 
in front of the woman. With a big smile he told her, Here, this is for you.  
Ice cream is good for the soul sometimes; and my soul is good already.

ALMOND RASPBERRY SANDWICH COOKIES


1 box Duncan Hines Golden Sugar Cookie Mix
1 egg
1 tbsp. water
1/2 tsp. almond extract
3/4 cup sliced natural almonds, broken
Seedless red raspberry jam

Preheat oven to 375ºF.

Combine cookie mix, buttery flavor packet from mix, egg, water 
and almond extract in large bowl. Stir until thoroughly blended. 
Drop half of dough by level measuring teaspoonsful 2-inches apart 
onto ungreased cookie sheets (dough will spread while baking).

Place almonds on wax paper. Drop other half of dough by level 
measuring teaspoonsful onto nuts. Place almond side up 2-inches 
apart on cookie sheets.

Bake both plain and almond cookies at 375ºF. for 6 minutes until 
set but not browned. Cool 1 minute on cookie sheets. Remove to 
cooling racks. Cool completely.

Spread bottoms of plain cookies with jam; top with almond 
cookies, almond side up. Press together to make sandwiches. Store 
in airtight container.

Makes 4 1/2 to 5 dozen cookies.

Breakfast in Bed Casserole

1 bag (32 oz.) frozen hashbrown potatos
1 lb bacon, cut into pieces, fried and drained.
1/2 c diced onions

1 green pepper, diced
3/4 lb cheddar cheese diced
1 dozen eggs
1 c milk
1/2 tsp dry mustard

salt  pepper to taste

Layer the hashbrowns, bacon, onions, green pepper and cheese in
a slow cooker, layered.
Add the cheese.
Beat eggs, milk and mustard, salt  pepper together; pour over mixture
and cook on Low for 10 hours. Serves 8.

Asparagus and Pea Casserole
2 cans (14 1/2oz.)asparagus
2 cans undiluted mushroom soup
2 cans green peas
1/2 small bag potato chips
4 boiled eggs

Drain asparagus (save liquid from 1 can and mix with soup). Put 
asparagus in casserole dish (14x9). Crush about 1/4 potato chips 
and place over asparagus. Slice boiled eggs over this, then put a 
layer of soup mixture. Then pour all peas over this. Put rest of 
soup over peas and top with potato chips. Bake 350 about 25 min.

Roasted Beet and Grapefruit Salad

6 small beets
1 medium ruby red grapefruit
2 ounces alfalfa sprouts, trimmed

Salad dressing:
1/3 cup extra-virgin olive oil
1 medium shallot, minced
3 pinches salt
10 grinds black pepper
1/4 cup red wine vinegar
Thyme leaves from 10 delicate sprigs

Preheat oven to 325 degrees F.

Wrap the beets individually in aluminum foil. Roast about 1 hour and 15 minutes 
or until fork tender. Remove beets from oven, unwrap and let cool 5 minutes 
before peeling. Slice the beets into eighths.

Remove the peel of the grapefruit with a sharp knife, cutting all the way down 
to the grapefruit flesh. Then cut the individual grapefruit segments out from 
their skin, using the supreme technique. Place the grapefruit segments in a 
bowl. Take the inner grapefruit remains and squeeze whatever juice you can out 
of it over the top of the grapefruit segments in the bowl.

Make the dressing by mixing together all the dressing ingredients along with 
all the juice that you can strain from the bowl of grapefruit.

Assemble the salad:
Make a little heap of alfalfa in the middle of the plate. Scatter the cut beets 
around the plate. Pinch off pieces of the grapefruit segments and scatter them 
around the plate. Drizzle generously with dressing, top with a couple more 
grinds black pepper and serve.

Braised Dark Meat Turkey over Egg Noodles

4 to 5 pounds turkey wings and drumsticks
Salt and pepper
1/4 cup vegetable oil
1 large onion, cut into 1/2-inch dice
4 carrots, peeled, halved lengthwise, and cut into 1/2-inch dice
4 stalks celery, bottoms and tips removed, halved lengthwise, and cut into 
1/2-inch dice
6 ounces tomato paste
1 cup low-sodium chicken broth
1/4 cup cider vinegar
12 ounces ale or good lager beer
6 to 8 cloves garlic, peeled and smashed
1 cup pitted oil-cured olives
2 large sprigs fresh rosemary
Cooked egg noodles, for serving

Generously salt and pepper the turkey.

Heat 2 tablespoons oil in a large heavy pot or Dutch oven over high heat. Add 
the turkey wings and drumsticks and brown as evenly as possible all over. Do 
this in batches if necessary.

Once browned, remove the turkey from the pot. Reduce the heat to medium-high 
and then add the onions, carrots, and celery and cook until tender. Add the 
tomato paste and cook, stirring, until it is mixed in. Then add all the 
remaining ingredients, except the olives and rosemary, and stir until 
everything is incorporated. Bring this liquid to a simmer, then add the turkey 
back to the pot, along with the olives and rosemary, and bring to a simmer. 
Cook about 3 to 3 1/2 hours over a low flame at a low simmer until the turkey 
meat falls off the bone easily with just a little nudge from a fork. Remove 
rosemary sprigs and serve over hot egg noodles.

Note: During cooking, occasionally check to see if the turkey is getting too 
browned or dried where not submerged under the braising liquid. If so, stir 
into the liquid and continue cooking.

2 tablespoons vegetable oil
1 pound Brussels sprouts, trimmed
Salt
3 tablespoons butter
3 tablespoons finely chopped shallots
3/4 cup chicken broth

Heat vegetable oil over high heat in a large skillet. Add Brussels sprouts and 
brown all over by shaking the pan often. Season with salt, to taste. Remove 
Brussels sprouts from pan, reduce heat to medium high and add the butter to 
melt. Add shallots and saute for a minute or 2. Add the sprouts back in, add 
the chicken stock, cover, reduce heat to medium low, and cook for 30 minutes or 
until sprouts are soft and tender.

1/2 large loaf rustic country bread, cut into 1-inch cubes
1/2 of a 10-ounce loaf ciabatta (about 2 cups diced)
8 plum tomatoes, about 1 3/4 pounds, tops cut off and quartered and sliced
2 shallots, sliced thin (about 1/3 cup)
1/3 cup capers, drained
1/2 cup olive oil
3 tablespoons balsamic vinegar
Salt and freshly ground black pepper
4 ounces feta cheese, crumbled
1 small bunch basil leaves, rinsed, thinly sliced, reserve some for garnish

Preheat oven to 350 degrees F.

Place bread cubes on a baking sheet and toast in oven 10 to 15 minutes. Remove 
and let cool.

Combine the bread with tomatoes, shallots and capers and let sit for about 5 
minutes. Meanwhile, add olive oil and balsamic vinegar to a bowl. Season with 
salt and freshly ground black pepper, to taste, whisk and add to bread. Add 
feta and basil to the bowl. Lightly toss with wooden spoon. Plate panzanella, 
garnish with basil leaves and serve.

2 sticks butter, softened, plus more for pan
2 cups dark brown sugar
1 tablespoon instant coffee
1 1/3 cups water
6 ounces semisweet chocolate chips
5 large eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour, plus more for pan
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3/4 cup raisins
1 cup walnuts
Confectioners' sugar, for garnish

Preheat oven to 325 degrees F.

Cream butter and sugar with an electric mixture until light and fluffy. Heat 
coffee, water, and chocolate in a saucepan over low heat, stirring often until 
chocolate has melted entirely. Add coffee-chocolate mixture to the creamed 
sugar and butter. Beat in eggs, 1 at a time until incorporated, and then mix in 
vanilla extract. Combine flour, baking powder, salt, cinnamon and nutmeg in a 
mixing bowl and stir together with a fork until incorporated. Gradually beat 
the dry mixture into the wet mixture. Finally, fold in the raisins and walnuts.

Butter and lightly dust a bundt pan with flour. Pour batter into pan and bake 
about 45 to 50 minutes or until a sharp knife point inserted into the cake 
comes out clean. Let cool to room temperature on a rack before inverting. Dust 
with confectioners' sugar and serve.

3 pounds russet (Idaho) potatoes, peeled
1 tablespoon butter, softened
2 cups half-and-half
2 to 3 garlic cloves, smashed
1 tablespoon herbes de Provence
Salt and freshly ground black pepper
2 cups grated Gruyere, packed (about a 1/2 pound)

Preheat the oven to 400 degrees F.

Peel and wash the potatoes and slice them really thinly using a plastic 
mandoline.

Generously butter a 12-inch ovenproof baking or gratin dish (about 2 1/2 to 
3-quarts).

In a small saucepan, bring the half-and-half, garlic cloves and herbes de 
Provence to a simmer. Season, to taste, with salt and pepper. Remove the garlic 
cloves. Set aside.

Arrange the potatoes in an overlapping layer on the bottom of the dish. Season 
the layer generously with salt and pepper. Scatter lightly with some of the 
grated cheese. Make another potato and cheese layer, finishing with a most 
generous cheesing.

Press the layers down gently. Pour the half-and-half mixture over the potato 
layers and fill the dish up to the top of the potatoes. Cover the dish loosely 
with foil so it is not touching the cheese on top and bake 30 minutes, uncover 
and bake another 10 to 15 minutes until the cheese is bubbly and nicely browned.

Let cool for 20 to 30 minutes before serving.

For the batter:
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups cooked sweet potato meat (about 2 sweet potatoes)
3 eggs
3/4 cup warm water
1 3/4 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract
1 cup golden raisins
1 cup toasted walnuts, crushed

For the glaze:
4 tablespoons unsalted butter
2 to 3 tablespoons spiced rum
2 cups confectioners' sugar

Special equipment: bundt pan

Preheat oven to 325 degrees F.

Lightly grease a 10-cup bundt pan.

In a mixing bowl, whisk together the flour, baking powder, cinnamon, and salt. 
Set the mixture aside. In a separate large mixing bowl, mash the sweet potato, 
leaving only a slight meaty texture. Whisk together the sweet potato and the 
eggs. Whisk in the warm water, then the sugar, then the oil followed by the 
vanilla extract. Stir in the dry ingredients until homogenous then fold in 
raisins and walnuts. Spoon the batter into the prepared bundt pan. Bake until a 
toothpick inserted into the center of the cake comes out clean, about 1 hour. 
Let the cake cool in the tin for 15 minutes and invert onto a serving platter 
or cake stand.

Meanwhile, make the glaze:
Melt the butter in a medium saucepan with the rum. Pull from the heat and whisk 
in the confectioners' sugar until smooth.

Pour the glaze over the cooled cake. Slice and serve.

1/2 stick butter
1 large onion, finely diced
2 tablespoons all-purpose flour
4 to 6 cups low-sodium chicken stock, water, or combination
1 (10-ounce) package frozen broccoli
1/2 to 3/4 cup heavy cream
Salt and freshly ground black pepper

Melt butter in large, heavy pot over medium-high heat. Sweat onions, and stir 
in the flour until incorporated. Gradually whisk in the stock. Add the broccoli 
and bring to a simmer. Cook for 20 minutes. Finish with cream. Roughly puree 
with an immersion blender and season, to taste, with salt and pepper.

1 pound parsnips, peeled, cut in 1/2 lengthwise, then cut into 1 1/2-inch chunks
Olive oil
Salt and freshly ground black pepper
1 bunch watercress, thick stems plucked
1 Gala or Red Delicious apple, cored and very thinly sliced
2 small shallots, very thinly sliced
1/4 cup apple cider vinegar
1 tablespoon whole-grain Dijon mustard
1/3 cup soybean or safflower oil
2 teaspoons superfine sugar

Preheat oven to 400 degrees F.

Toss parsnip chunks with olive oil and salt and pepper and place on a baking 
sheet. Roast until nicely browned, turning as needed, about 20 minutes. Let 
cool. Then toss with watercress, apple and shallot.

Whisk together dressing ingredients and season, to taste, with salt and pepper.

1/4 cup olive oil
1 large onion, finely diced
2 celery stalks, finely diced
2 carrots, finely diced
1-pound bag split peas, rinsed and picked through
1 1/2 pound smoked ham hock
2 quarts chicken stock, water, or combination
Salt and freshly ground black pepper

In a large saucepan, saute onion, celery and carrots over medium-high heat. Add 
peas and ham hock and cover with stock by a couple inches. Bring to a simmer 
and cook about 1 hour until soup is thick and peas have almost disintegrated 
but not quite. Season, to taste, with salt and pepper. Remove ham hock and let 
cool. Pull meat from ham hock bone and shred. Garnish with ham and pepper.
