[RecipesAndMore] Messy Porkchops

2009-03-12 Thread Neesie

Messy Porkchops

4 pork chops
salt pepper
oregano
dry mustard
brown sugar
1 can tomato sauce

Sprinkle pork chops with salt and pepper and brown in
skillet. Remove pork chops from skillet and place in a
baking dish. Sprinkle liberally with oregano and brown
sugar. Add a pinch of dry mustard to each pork chop.
Take tomato sauce and spoon evenly over each pork
chop (if necessary, you can add a little bit of water to
make the tomato sauce go a little farther). Bake at 350
for 30 - 45 minutes or until chops are tender.

Note: You can skip the skillet browning step if you choose.
If so, place chops directly in baking dish, cover with all
ingredients and then bake at 350 for 1 hour.

Subject: [RecipesAndMore] Chocolate Raspberry Brownies

Chocolate Raspberry Brownies

These chocolate brownies are loaded with chocolate and raspberry flavor.
Make these brownies for a weekend treat or special occasion.

Ingredients:

. 1 1/2 cups granulated sugar
. 4 large eggs
. 1/2 teaspoon salt
. 2 teaspoons vanilla
. 1/2 cup raspberry preserves or jam (seedless or not)
. 1 cup melted butter (8 ounces)
. 3/4 cup unsweetened cocoa powder, sifted
. 1 cup all-purpose flour
. chopped pecans, about 1/2 cup, optional
. 3/4 cup semisweet chocolate chips, optional
. **Optional Topping**
. 1 tablespoon raspberry preserves or jam (seedless or not)
. 1/2 to 2/3 cup confectioners' sugar

Preparation:
Heat oven to 325°. Grease and flour a 9-inch square baking pan.

Beat sugar with eggs and salt until thick and lemon-colored, about 3 to 4
minutes. Beat in the vanilla and jam until smooth and well blended. Stir in
the
melted butter until blended, then stir in cocoa and flour. Add chocolate
chips, if using. Spread in prepared pan and sprinkle with chopped pecans, if
using.

Bake for 35 to 40 minutes, or until set. The brownies will be soft and
moist, but shouldn't be runny in the center. If a toothpick comes out with
batter,
let them bake a little longer.

These brownies are soft and sticky to cut, so let them cool thoroughly.

For optional topping, heat the raspberry preserves; stir in the
confectioners' sugar until the mixture reaches the desired consistency. If
the mixture is
a little too thick, add hot water, a drop or two at a time, until you can
drizzle the mixture.

If your shower curtain seems about as flexible as the Iron Curtain, try rubbing
some baby oil on the shower rod. A bar of soap also works well. Either way,
your curtain will slide more smoothly.

melted and smooth. Remove from heat. Stir in sugar, jam, and egg just
until combined. Stir in flour, baking powder, and salt. Spoon a scant 1
tablespoon of the filling into each pastry-lined muffin cup.
3. Bake for 12 to 15 minutes or until filling is set. Cool in muffin
cups on a wire rack for 5 minutes. Remove from muffin cups; cool
completely.
4. Evenly spread Chocolate Ganache over filling. Top each tassie with a
fresh raspberry.
5. In a small saucepan, combine white chocolate and shortening; heat and
stir over low heat until melted. Drizzle over tarts. Let stand until
white chocolate is set. Makes 24 tassies.
Chocolate Pastry: In a medium bowl, stir together 1-1/4 cups all-purpose
flour, 1/3 cup sugar, and 1/4 cup unsweetened cocoa powder. Using a
pastry blender, cut in 1/2 cup cold butter until mixture is crumbly. In
a small bowl, whisk together 1 egg yolk and 2 tablespoons cold water.
Gradually stir egg yolk mixture into flour mixture. Gently knead the
dough just until a ball forms. If necessary, cover dough with plastic
wrap and chill for 30 to 60 minutes or until dough is easy to handle.
Chocolate Ganache: In a small saucepan, heat 1/4 cup whipping cream over
medium-high heat just until boiling. Remove from heat. Add 3 ounces
semisweet chocolate pieces (do not stir). Let stand for 5 minutes. Stir
until smooth. Cool for 15 minutes before using. Enjoy.

[RecipesAndMore] Chocolate Irish Tipsy Cake

2009-03-12 Thread Jan

Chocolate Irish Tipsy Cake
INGREDIENTS:
1 package chocolate cake mix
1 (3-4-ounce) package instant chocolate pudding mix
3/4 cup Irish whiskey or bourbon, divided
1/2 cup cooking oil
4 jumbo or extra large eggs, at room temperature
3/4 cup sugar
1/4 cup butter or margarine
1/4 cup water
1 teaspoon lemon juice
whipped cream for garnish

DIRECTIONS:
In a large bowl, combine cake mix, pudding mix, 1/2 cup Irish whiskey,
and oil, add eggs and beat at medium speed of an electric mixer for 4
minutes, scraping down sides of bowl as necessary. Spoon into a greased
and floured 10-inch bundt or tube pan. Bake in a preheated moderate oven
(350 degrees) for 45 minutes, or until a cake tester inserted into the
cake comes out clean. When cake is almost done, prepare syrup. Combine
sugar, butter, water, and lemon juice in a small heavy saucepan. Bring
to a boil slowly, stirring until sugar is dissolved. Remove from heat
and stir in remaining 1/4 cup Irish whiskey or bourbon. Turn cake out
onto two large sheets of aluminum foil placed together to form the shape
of a cross. Let cake cool for 10 minutes, top side up for tube cake and
upside down for bundt cake. Using a skewer or long bamboo pick, make
holes all over top and sides of hot cake. Drizzle syrup very slowly over
cake, being careful that too much does not run into any cracks on top of
cake. Bring foil up around cake and wrap securely. Cake may be served
when completely cool, or store in an airtight container overnight. Cake
may be wrapped securely in foil and stored in the refrigerator for
several weeks or in a freezer for up to six months. Serve with whipped
cream.

Yield: 1 10-inch tube cake
