It was a very hard decision to make... So try not to screw it up!!!

May the problems you had, forget your home address!

[RecipesAndMore] Snow Cap Cookies

2009-12-21 Thread Don Lorah
Snow cap cookies

In a large mixing bowl, beat 6 eggs; add 16 ounces of confectioners sugar and
continue beating for 10 minutes. Gradually add 3 cups flour and 4 tbs of
anise seed. Mix well, if batter is too thin add additional flour. Drop by tsp
or tbs for larger cookies on a well greased cookie sheet. Batter will
spread, leave room on cookie sheet. Let stand at room temperature overnight,
crust will form on cookie. Bake in a 325 oven for 12-15 minutes; remove while
still white, cool and remove.

I made them yesterday they are unusual tasting. Don

  Hi Don,
That sounds interesting and different. I have always had a nightmare making
gravy. My daughter Debbie is also a good cook so I asked her what I should do.
She said take equal parts of butter and flour. Melt the butter and then
whisk in the flour. She said I didn't have to do it on high because it moves
very fast, so she said to do it on medium heat, it might be easier and it was.
She also said to chill my turkey pan drippings so I could skim off any yucky
fat if there was any. Then she said have my juice or broth ready there because
as soon as the roux was ready to add it right away, mix it, then turn the heat
down. I added some chicken bouillon and a little water to my pan drippings and
it worked quite well, non of those yucky flour lumps, no corn starch and cold
water slurry thing.
I am definitely going to try it again.
We had it with stuffing and today i am going to put some turkey on bread and
put the rest of the gravy.

Re: [RecipesAndMore] Thanksgiving

2009-11-28 Thread Don Lorah
Hi Lora,
I wish there were more like you giving life and warm personality to the list
instead of just sterile recipes.
Hope you like this, Don

Twas the night of Thanksgiving

Twas the night of Thanksgiving, but I just couldn't sleep.
I tried counting backwards, I tried counting sheep.

The leftovers beckoned -- the dark meat and white

but I fought the temptation with all of my might.

Tossing and turning with anticipation,

the thought of a snack became infatuation.

So, I raced to the kitchen, flung open the door

and gazed at the fridge, full of goodies galore.

I gobbled up turkey and buttered potatoes,

pickles and carrots, beans and tomatoes.

I felt myself swelling so plump and so round,

'till all of a sudden, I rose off the ground.

I crashed through the ceiling, floating into the sky

with a mouthful of pudding and a handful of pie

But, I managed to yell as I soared past the trees .

Happy eating to all -- pass the cranberries, please.

May your stuffing be tasty, may your turkey be plump.

May your potatoes 'n gravy have nary a lump.

May your yams be delicious, may your pies take the prize,

May your Thanksgiving dinner stay off of your thighs!

WISHING YOU ALL A HAPPY THANKSGIVING.

I think I forgot to say that Debbie said to do it with a fork or a whisk. I
used a whisk which I have rarely done before. I also used kind of a small
saucepan. it was also real butter, not margarine. it wasn't the expensive
kindlike Land O Lakes, it was from Savalot and it's about two dollars a pound
instead of four. But I think it worked out and I want to do more to make sure
I didn't just get lucky that time.
I notice you spell your last name almost like my first name except with an H
at the end. That is funny. I guess a person could be Lora Lorah. My
grandmother was Laura, but my mother decided to spell it different, whoever
knows why.

[RecipesAndMore] Turkey croquettes

2009-05-07 Thread Don Lorah
Here are two recipes, I made the second, should have added poultry seasoning
...

Don
Ingredients:

list of 13 items

. 1 tablespoon butter

. 1 small onion, finely chopped

. Salt

. Freshly ground black pepper

. Grinding of fresh nutmeg

. 1-1/2 cups mashed sweet potato or white potato (see Note)

. 1 egg yolk

. 1 tablespoon milk or heavy cream

. 1/2 cup diced cooked turkey (or chicken, ham, duck, or goose)

. 1 cup flour (about)

. 1 cup bread crumbs (about)

. 2 eggs

. Peanut oil

list end

Preparation:

In a large skillet, melt the butter over moderate heat. Saute the onion with a
sprinkling of

salt,

pepper

, and

nutmeg

for about 5 minutes, or until softened but not brown. Place onion in a large
bowl. Add the

mashed potatoes

, egg yolk, milk, and

turkey

and mix together. Season generously with

salt,

pepper

, and

nutmeg.

Cover and refrigerate the

potato

mixture for several hours, or overnight, until well chilled.

Place the flour on a large plate. Place the bread crumbs on another plate.
Whisk the eggs in a bowl and season with

salt

 and

pepper.

To form the croquettes, take about a tablespoon of mixture in your hands and
form into a ball. Roll the ball in the flour; remove and shake off excess.

Dip into the egg and coat thoroughly, and then coat in the bread crumbs. Place
the prepared croquettes on a large plate while you heat the oil.

Add enough peanut oil to a large skillet or deep-fat fryer to come 2-1/2 inches
up the side. Heat the oil to 375 degrees F. (If you don't have a thermometer,

simply add a tiny bit of bread crumbs or flour to the fat, and when it's ready
it will sizzle vigorously.) Fry the croquettes about 2 to 3 minutes, or

until golden brown. (Be careful not to crowd the skillet.) Remove and drain on
paper towels and serve immediately.

Yield: About 12-14 croquettes

Note: You can use leftover

mashed potatoes

or simply take a boiled or baked potato and mash it until somewhat smooth.

chicken)

[RecipesAndMore] Re: CHOCOLATE DIPPING

2009-04-21 Thread Don Lorah

Subject: [RecipesAndMore] CHOCOLATE DIPPING

CHOCOLATE DIPPING
Chocolate dipping is a difficult process. Proper equipment and
ingredients must be available. For success, follow directions.
1. Temperature is important. Keep room between 60 and 70 degrees F.
Never dip on a warm or humid day and avoid all drafts.
2. Arrange all equipment conveniently. Have centers ready and at room
temperature. Cover wire racks with waxed paper. Place these to right of
dipping pan. Have ready a good, tested candy thermometer, a 1½ quart
double boiler and a dipping fork.
3. Use special dipping chocolate and grate fine. Melt grated chocolate
over hot water in top of double boiler. Melt slowly, stir constantly but
never let water boil. Do not melt less than 1 pound or more than 2
pounds of chocolate at one time. When completely melted, immerse bulb of
thermometer in chocolate. Continue stirring until chocolate has reached
130 degrees F.
4. Cool quickly by emptying hot water from bottom of double boiler and
refilling with cold water. Stir constantly and rapidly, using circular
motion, until chocolate has cooled to 83 degrees F.
5. To keep chocolate at this temperature, add hot water to bottom of
boiler until water is 85 degrees F. Quickly replace chocolate.
6. Chocolate is now ready for dipping but must always be stirred between
each dip. Drop center in chocolate and cover well. Lift out with fork,
tap on rim of saucer to remove excess chocolate and draw fork carefully
across rim. Invest piece on waxed paper, remove fork and form string
across top with chocolate that is still on fork. Work fast. If
necessary, repeat steps 3, 4, 5.

 Apple Crisp

 1 cup old fashioned oats
 1 cup light brown sugar
 1 stick butter
 1 teaspoon cinnamon
 1/4 teaspoon salt
 1 cup walnuts, chopped coarsely
 8-10 apples, peeled and sliced
 2 tablespoon lemon juice
 2 tablespoon flour
 1/2 teaspoon cinnamon
 1 tablespoon sugar
 1 pinch nutmeg (optional)

Cut butter into oats and sugar with pastry blender until there are
pea-sized clumps. Blend in cinnamon, salt and chopped nuts. Put lemon
juice in a large bowl and slice apples into that bowl, tossing after
each addition. Sprinkle on the sugar, flour, cinnamon, salt and nutmeg
(if desired). Toss well. Layer half the crumb mixture in the bottom of
a buttered crockpot. Press down lightly. Add all the apples and then
another layer of the crumb mixture. Cover and cook on high for 4
hours. Stick a spoon or piece of crumbled aluminum foil under the lid
so that steam can escape during cooking. This will allow the top and
bottom to crisp. Serve with ice cream or whipped cream.

Coconut Cream Easter Eggs
6 tb Butter; melted
1/3 c Light corn syrup
2 ts Vanilla extract
1/2 ts Salt
3 1/2 c Powdered sugar
10 oz Sweetened Coconut Flakes
Additional powdered sugar
SIMPLE CHOCOLATE COATING:
12 oz Chocolate Chips (Semi-Sweet)
2 tb Shortening*, plus an additional
2 ts Shortening*

*(Do NOT use butter, margarine or oil)
1. In large bowl, stir together butter, corn syrup, vanilla and salt.
Gradually add powdered sugar and coconut, beating until blended.
2. Sprinkle about 1 tablespoon additional powdered sugar on flat
surface. Spoon coconut mixture onto prepared surface; knead about 5
minutes. Using 1-1/2 teaspoons mixture for each candy, shape into egg
shape. Place on wax paper-covered tray.
3. Refrigerate 1 to 2 hours before dipping into SIMPLE CHOCOLATE
COATING. Place coated eggs on wax paper-covered tray. Store in cool, dry
place. About 40 candies.
SIMPLE CHOCOLATE COATING
1. In medium heat-proof bowl, place chocolate chips and shortening. In
separate large heat-proof bowl, put very warm water (100 F. to 110 F.)
to 1-inch depth. Carefully place bowl with chocolate into bowl with
water; water should come halfway up side of chocolate bowl.
2. With dry rubber scraper, stir chocolate and shortening CONSTANTLY,
until chocolate and shortening are melted and mixture is smooth. Do NOT
get water in bowl with chocolate.* If water cools, replace it with very
warm water as directed above. Remove chocolate bowl from inside water
bowl.
3. With fork, one at a time, dip chilled centers into chocolate mixture;
gently tap fork on edge of bowl to remove excess chocolate.** Invert
coated center on prepared tray; swirl small amount of melted chocolate
on top to cover fork marks; let stand until firm. Store candies loosely
covered in cool, dry place. Coating for 3 to 4 dozen centers.
* If water or moisture gets into chocolate, it can seize and tighten. As
an emergency measure, ONLY, stir in additional shortening, 1/2
teaspoonful at a time, just until chocolate is fluid again.
** If chocolate mixture cools below 84 F, return bowl with chocolate
into bowl with warm water. Chocolate is best for coating between 84 F.
and 88 F.

Old home remedies used to tell you to use some kind of oil on a burn, but
first aid says to first run it under cold water to cool the area. applying
ice would be too cool too fast, but not a bad idea.

it works as long as you apply it immediately. A friend of hers told her about

Fried Cabbage and Noodles

6-8 slices thick bacon
1 large head cabbage
1 (16 oz.) pkg. noodles (homemade are best)
1 tsp. salt
1/4 tsp. garlic salt
Chop bacon slices into small pieces; put in large pot and fry until crisp.
Thinly slice cabbage, as you would for cabbage slaw. When bacon is crisp,
add
cabbage and cook until tender, stirring often.
While this is cooking, boil water, then cook noodles until just done (do not
overcook). Drain noodles and add to cabbage bacon mixture. Add seasonings;
this is the time to taste adjust seasonings.
Makes 8-10 servings; cut recipe in half for 4-5 servings.

[RecipesAndMore] Dirty Laundry

2009-03-08 Thread Don Lorah
Subject: Fw: Dirty Laundry

A young couple moves
 into a new neighborhood.
 The next morning
while they are eating breakfast, the young
 woman sees her neighbor
 hanging the wash outside.
 That laundry is
 not very clean, she said.
 She doesn't know
 how to wash correctly.
Perhaps she needs better laundry soap

Her husband looked on, but remained silent.

Every time her neighbor would hang her wash to dry, the
young woman would make the same comments.

About one month later, the woman was surprised to see a
nice clean wash on the line and said to her husband:

Look, she has learned how to wash correctly.
I wonder who taught her this?

The husband said, I got up early this morning and
 cleaned our windows.

And so it is with life.. What we see when watching others
depends on the purity of the window through which we look.

1 can of sweetened condensed milk

1 jar of Mrs. Richards caramel topping

1 bag of crushed Heath bars

1 small container of Cool Whip

1 straw (for poking holes into cake)

   Directions:

Follow instructions on the back of German Chocolate cake.

Let cake Cool for 5 min.

Poke holes throughout cake with straw.

Heat up caramel in the microwave for a couple of minutes so it is soft enough
to pour.

Pour caramel all over cake (make sure it goes into the holes). Repeat with
condensed milk.

Put cake in fridge overnight to chill.

  Right before serving -

Spread whip cream over cake and sprinkle the ENTIRE bag of Heath bar crumbs
over cake.

Note: place caramel in a bowl while heating and heat in 15 - 30 second
increments. Caramel will boil over and make a huge mess in the microwave if not
properly monitored.

I make them this way:
Hard boil 8 eggs, peel and place in suitable container, pour off juice from 2
cans sliced red beets and add sliced red beets to container with eggs. Add 1/2
cup sugar and 1/2 cups cider vinegar and red beet juice in a saucepan, heat

beets, let stand for one day then refrigerate for 3 more days. I always make

[RecipesAndMore] Joke

2009-02-01 Thread Don Lorah

An atheist was walking through the woods.

'What majestic trees!
'What powerful rivers!
'What beautiful animals!
He said to himself.

As he was walking alongside the river, he heard a rustling in
the bushes behind him. He turned to look. He saw a 7-foot grizzly bear
charge towards him.

He ran as fast as he could up the path. He looked over his
shoulder saw that the bear was closing in on him. He looked over his
shoulder again, the bear was even closer.

He tripped fell on the ground. He rolled over to pick himself
up but saw that the bear was right on top of him, reaching for him with his
left paw raising his right paw to strike him.

At that instant the Atheist cried out, 'Oh my God!'

Time Stopped.
The bear froze.
The forest was silent.

As a bright light shone upon the man, a voice came out of the
sky. 'You deny my existence for all these years, teach others I don't
exist and even credit
creation to cosmic accident.' Do you expect me to help you out
of this predicament? Am I to count you as a believer'?

The atheist looked directly into the light, 'It would be
hypocritical of me to suddenly ask you to treat me as a Christian now, but
perhaps you could make the BEAR a Christian'?

'Very Well,' said the voice.

The light went out. The sounds of the forest resumed. And the
bear dropped his right paw, brought both paws together, bowed his head
spoke:

'Lord bless this food, which I am about to receive from thy
bounty through Christ our Lord, Amen.'

In A Mug

I just tried this and it is absolutely awesome!!!

  Ingredients:

  4 tablespoons of self-rising flour
  4 tablespoons of sugar
  2 tablespoons of Cocoa
  1 egg
  3 tablespoons of milk
  3 tablespoons of oil
1 small splash of Vanilla flavoring
3 tablespoons of Chocolate Chips (optional)

Note: I did not use the Chocolate Chips.

  Note: I used a 14 ounce mug.

  Preparation:

  1. Add dry ingredients to mug and stir well.
  2. Add the egg and mix again.
  3. Pour in milk and oil and mix well.
  4. Place mug in microwave and cook for 3 minutes on high.
  5. The cake will rise over the top of the mug, but no problem with that.
  6. When cake has cooled a little, run a knife around the edge to break it
loose from the mug.
  7. Dump out onto a plate and Dig In.

[RecipesAndMore] Re: Self-rising flour

2008-08-31 Thread Don Lorah
Hi Sugar,
When baking soda is used as an ingredient, the recipe must also contain an
acid, lemon juice, vinegar, or buttermilk to react with the soda. You seem to
be quite a cook and baker, regards, Don

No, there was no cake mix mentioned here, just flour and chocolate chips,
oil, sugar, enough just to put into one! coffee mug and make one coffee
 mug
cake. no rising agent was mentioned in the first post of this, although it
did say in the recipe it rises above the cup. go figure.
waiting for more input; also one egg was mentioned.

Hi Sugar,
Got this from the net:

1. Using a dry measure, measure the desired amount of flour into a separate
container.
2. For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and
1/2 teaspoon of salt.
3. Mix to combine.

This dough may be kept in the refrigerator for 3 days or
it may be frozen.

2 cups unbleached all-purpose flour
1 1/2 teaspoons sugar
1 teaspoon salt
3/4 cup shortening
1 egg
1/4 cup water
1 1/2 teaspoons vinegar

In a large bowl mix together the flour, sugar and salt with a pastry
blender. Cut the shortening in to the mixture until it resembles coarse
meal. In a separate bowl beat the egg with the water and vinegar. Add the
egg mixture to the flour mixture. Mix until flour is completely moistened
and dough can be gathered in to a ball. Chill before rolling.

donness. I have had the same experience with navy beans. It must have
something to do with the beans, themselves. I will e purchase and try another
bag, I want to make lime bean casserole with onions and cheese. Thanks for the
reply, regards, Don

I cook them like I cook my pinto beans. I soak them over night then I cook
them on low in a crockpot adding spices onions and bacon, ham salt pork or
fatback. When cooking beans on a stove I cook them for about a hour and thirty
minutes then I turn the fire down to low and be sure to add plenty of water and
test for softness. I think you cooked for too long.

  the way you charge it
  is simpel
plug the little short cord that came with it
  into the player
and plug the other end into the u s b port on your pc
if this is the first time to charge it
it will take about 6 to 8 hours
then each time after that 3 to four hours

  as for the volume
you will find a round button like a bigt round dot on the front of the player
about in the center
all around that dot is four buttons
they are flat and rite again the big dot
the top one, is volume up
and the bottom one is, volume down
this is when you have the player long ways, so that the head phone jack is at
the top left

[RecipesAndMore] Pee party

2008-02-14 Thread Don Lorah
block quote

THE TEA PARTY

When I was a toddler, someone had given me a little Tea Set as a gift, and it
was one of my favorite toys.

Daddy was in the living room engrossed in the evening news when I brought him a
little cup of tea which was just water, of course.

After several cups of tea and lots of praise for such yummy tea, my Mom came
home. My Dad made her wait in the living room to watch his little Princess
bring him a cup of tea, because it was, Just the cutest thing!

My Mom waited, and sure enough, here I come down the hall with a cup of tea for
Daddy. She watches him drink it up and then says, Did it ever occur
to you that the only place that a toddler can reach to get water is the toilet?

THE END (I hear you laughing!)

Fried Cornmeal Mush

2 3/4 cups water
1 cup cornmeal
1 teaspoon salt
1 teaspoon sugar
1 cup cold water

Bring 2 3/4 cups water to a boil in saucepan. Combine remaining ingredients
in a mixing bowl. Gradually add cornmeal mixture to the boiling water,
stirring
constantly. Cook until the mixture thickens, stirring frequently. When
thickened, cover, turn heat to lowest settings, and cook for 20 to 25
minutes. Pour
into a small loaf pan. Cool then chill thoroughly in the refrigerator.

To unmold the cornmeal mush, loosen edges with a spatula. Turn out onto a
cutting board. Cut into 1/2-inch slices, dip into extra cornmeal. Fry in a
small
amount of hot bacon drippings or a combination of oil and bacon drippings.
Turn to brown both sides. Serve with butter and hot syrup. Delicious with
bacon
and eggs, too. Wrap unused cornmeal mush in plastic wrap and store in
refrigerator.

Subject: Fw: 7 reasons not to mess with children

A little girl was talking to her teacher about whales.

The teacher said it was physically impossible for a whale to swallow a human
because even though it was a very large mammal its throat was very small.

The little girl stated that Jonah was swallowed by a whale.

Irritated, the teacher reiterated that a whale could not swallow a human; it
was physically impossible.

The little girl said, When I get to heaven I will ask Jonah.

The teacher asked, What if Jonah went to hell?

The little girl replied, Then you ask him.

A Kindergarten teacher was observing her classroom of children while they
were drawing. She would occasionally walk around to see each child's work.

As she got to one little girl who was working diligently, she asked what the
drawing was.

The girl replied, I'm drawing God.

The teacher paused and said, But no one knows what God looks like.

Without missing a beat, or looking up from her drawing, the girl replied,
They will in a minute.

A Sunday school teacher was discussing the Ten Commandments with her five
and six year olds.

After explaining the commandment to honour thy Father and thy Mother, she
asked, Is there a commandment that teaches us how to treat our brothers and
sisters?

Without missing a beat one little boy (the oldest of a family) answered,
Thou shall not kill.

One day a little girl was sitting and watching her mother do the dishes at
the kitchen sink. She suddenly noticed that her mother had several strands
of white hair sticking out in contrast on her brunette head.

She looked at her mother and inquisitively asked, Why are some of your
hairs white, Mom?

Her mother replied, Well, every time that you do something wrong and make
me cry or unhappy, one of my hairs turns white.

The little girl thought about this revelation for a while and then said,
Momma, how come ALL of grandma's hairs are white?

The children had all been photographed, and the teacher was trying to
persuade them each to buy a copy of the group picture.

Just think how nice it will be to look at it when you are all grown u up
and
say, 'There's Jennifer, she's a lawyer,' or 'That's Michael, He's a doctor.'

A small voice at the back of the room rang out, And there's the teacher,
she's dead.

A teacher was giving a lesson on the circulation of the blood. Trying to
make the matter clearer, she said, Now, class, if I stood on my head, the
blood, as you know, would run into it, and I would turn red in the face.

Yes, the class said.

Then why is it that while I am standing upright in the ordinary position
the blood doesn't run into my feet?

A little fellow shouted,
Cause your feet ain't empty.

The children were lined up in the cafeteria of a Catholic elementary school
for lunch. At the head of the table was a large pile of apples. The nun made
a note, and posted on the apple tray:

Take only ONE . God is watching.

Moving further along the lunch line, at the other end of the table was a
large pile of chocolate chip cookies.

A child had written a note, Take all you want. God is watching the apples.

It doesn't matter how many people you send this to, just remember if it made
you laugh, your friends will laugh too.

Hi Don,

As I live alone I do anything and everything for meals on Thanksgiving.

One year I made turkey breast. One year I did make an entire turkey
dinner--just for me--and it took all day.

One year I made Cavatine--a layered Italian dish with ground beef,
pepperoni, pasta, red sauce and cheese.

Whatever I decide to make that particular year is what I have. I do
usually make a good dessert and green bean casserole no matter what.

I have also accepted a Thanksgiving dinner delivered to me by a local
church. And gone to a church for dinner--two different churches.

And I have accepted invitations to join friends for Thanksgiving
dinner--that is what I am doing this year--going to the family of some
friends.

If I would have cooked, this year, I would have made chili.

Pretty nontraditional--but I get so little time to do some other
things that I don't always like to spend the free day entirely in the
kitchen.

Since I am eating out today, and going for the shopping marathon all
day tomorrow with my sister, the chili will wait until Saturday.

Sherri

 HI All,
Place your turkey in the roasting pan breast down, back up; the white meat
will roast in its own juice. Cover with foil and roast at 325 degrees
 till
 tender and done.
It would be interesting to know how many of the group will roast a turkey
 on
Thanksgiving. Please let us all know.
I also baked a pumpkin pie today with no pie crust, don't like crust very
 much.
Happy Thanksgiving to all from Don
