to Saturday) using the From/To smartly?
Currently, I have it set to run +F-00-00-09 +T-00-00-03 on Tuesday.

If you are running on Unix, you can use the date command from the
command-line to insert something like this:
analog +T`date last Sunday` +F`date Saturday before last`
Or something of the sort. man date for more info.
