I also experience this problem. When I begin to reply to a message, all words are underlined until I go to Edit-Current Languages in the email creation window and select a language. However, for me, this setting is not saved, as the next time I reply, I have to select the language again. This

After reading the comments more carefully above, I did go to Edit-Preferences-Composer Preferences and select a different language, clicked OK and closed Evolution, then restarted it and again went to Edit-Preferences-Composer Preferences and selected the language I wanted. This seemed to fix it
