Hello,
in order to change the texts appearing in the UI you got to customize
the language catalogue.
For the jspui and api it is:
[dspace-source]/dspace-api/src/main/resources/Messages.properties
In order to overlay this, copy the file to

To change text or links in the navbar, for jspui you have to edit the
files webapp/layout/navbar*.jsp
