I've run EMC2 from a USB stick but it was using one of the smaller
distros that had a USB install as an option. It seemed to run fine but
all of it was pulled into RAM and run from there.

Yup, here's the key item:
18. Reboot your computer and set your system BIOS to boot
from USB-HDD or USB-ZIP. Also set the boot priority if necessary.
None of the computers I have have such an option, although all
of them have on-mobo USB. Maybe the very latest ones that have
nothing BUT
Here is a link to install PC-Linux mini to a USB key, you may be able to
pick
up some tips there. Maybe just substitute the ubuntu disk for the
PC-Linux disk
and follow the directions.
