i use cyrus-2.0.12 and when i send a mail with an é or è in the
suject, the é is replace with X.
How can i fix this ?

dont send mails from the shell. Use a mail client.
echo hello | mail -s 'hélo' someuser
will end up as Subject: hXlo

This is not a bug, it's a feature :)
This is done in accordance to some rfc I guess. You can try to edit
message.c and somewhere around line 270, change *p = 'X'; to //*p = 'X'; and
recompile. Might work :)
