LTSB was created by Microsoft to satisfy a very specific segment of Windows
users, those that are legally required to certify their machines, and where the
certification process could take more than 4-6 months. And no, schools don’t
fall into this category, think Hospitals and Nuclear Power
I use MDT to deploy 7 and 10 and use WSUS with no SCCM. We went with Win 10
Enterprise, which is pretty similar to the education SKU but the edu I think is
a lot cheaper? I had no problems doing what I wanted with MDT and Win 10 Ent.

Our school district has been using MDT to deploy Windows 7 and WSUS to
update Windows 7 for a couple years now.
Windows 10 has this new Windows as a Service thing and I am trying to
figure it all out. We have a working Windows 10 deployment in MDT, but we
are still trying to decide
