I bought an iMac 27 Retina 4K in 2015. I think I paid about 3K. Still working
well, still fast enough for Photoshop and anything else I’d want to do. With a
second Dell monitor it makes a nice work station

I was looking into this not too long ago, data rates on NVME are a lot higher
than SATA.

the large drives when rummaging through my full archive, rather than my working

My standard setup has four of them
When I got a trashcan mac I also got an OWC thunderbolt 2 external drive bay to
go with it. Unfortunately, not only is it a bit loud, but when I use it as
thunderbolt rather than USB it has a tendency to disconnect from my mac, so
that I'm constantly getting warnings about missing drives etc.
