2 pounds sweet potatoes (4 to 6 medium)
1/3 cup pure maple syrup or maple-flavored syrup
3 tablespoons coarse-grain Dijon-style mustard
2 tablespoons cooking oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Maple Glazed Sweet Potatoes
This is a candied sweet potato recipe with a difference. It still has
the sweetness that so many people love, but it has more flavor beyond
the sweetness. If you cannot get maple sugar, you can use brown sugar.
