[RecipesAndMore] DUMP-CHICKEN
They are called DUMP-CHICKEN because you DUMP the mix into a 1 gallon freezer baggie with the chicken and freeze it. Then when you want to eat it you thaw overnight in the fridge and DUMP it into a pan and cook it. All the recipes below can be made with 4-8 pieces of chicken (any pieces will do... wings, thighs, drumsticks, bone-in, skin-on, boneless, skinless,maybe even whole chicken) To cook the chicken thaw completely in the fridge dump into 9x12 pan, bake at 350 until done. For BL/SL breasts it is about 25-35 mins.For chicken pieces, it runs closer to an hr.You can also use your crock pot for this too! Combine cilantro and jalapeños in a bowl. Cut a pocket in the side of each steak, without cutting all the way through. Stuff pockets with cilantro mixture and secure closed with toothpicks. Recipes from may 15th. show --- Fresh Tomato Salad Serves: 6 to 8 Ingredients: 5 tomatoes, diced 1 onion, chopped 1 cucumber, sliced 1 green bell pepper, chopped 1/2 cup chopped fresh basil 1/2 cup chopped parsley 2 tablespoons crushed garlic salt and pepper to taste 2 tablespoons white wine vinegar In a large bowl, combine the tomato, onion, cucumber, bell pepper, basil, parsley, garlic and vinegar. Toss and add salt and pepper to taste. Chill and serve. HONEY BEE AMBROSIA 4 med. oranges 1 med. banana 1/2 c. orange juice 1/4 c. honey 2 tbsp. lemon juice 1/4 c. flaked coconut Pare oranges; cut crosswise into thin slices place in serving bowl. Peel bananas; cut thin slices into bowl with oranges. Toss fruits. Blend orange juice, honey lemon juice; pour over fruits. Sprinkle with coconut. --- Mexican Chef Salad 1 head lettuce 2 tomatoes 1 avocado 1 bag Doritos, broken 1 1/2 lb. ground beef 1 can red kidney beans (15 oz) 1 onion, chopped 6 oz. Cheddar cheese, grated 1 cup Thousand island dressing (Kraft) Brown ground beef 1/2 onion. Drain. Add beans; let cool while making the salad. Mix lettuce, tomatoes, avocado remainder of chopped onion. Add dressing mix. Add cheese Doritos. Don't add doritos too soon before serving or they will become soft. Just before serving, add meat mix well. Serves 6 --- PANTRY SALAD 1 can black beans, drained rinsed 1 can whole kernel corn, drained 1 can black eyed peas, drained 1 can diced tomatoes 1 bell pepper, diced 1 bunch green onions, chopped 2 carrots, peeled and chopped 1 tsp garlic powder salt and pepper to taste 1 bottle Italian dressing In a large bowl mix all ingredients. You could also use as centerpiece with shovel in and plastic flowers. When dinner is over, just start serving dirt. It can be a surprise or shock to others when they're not aware of it. Enjoy! FRIED CHICKEN FOR PICNICS Printed from COOKS.COM 2 (3 lb.) broilers, cut into pieces 1 1/2 c. unsifted flour 1 1/2 tsp. salt 2 tsp. thyme leaves 2 tsp. paprika 1 egg 1/3 c. milk 2 tbsp. lemon juice Vegetable oil Wash but do not dry the chicken. Combine flour, salt, thyme, and paprika, in a shallow dish. Beat the egg and combine with milk and lemon juice in another shallow dish; mix well. Roll the chicken in the flour; dip in the egg mixture and then roll again in the flour. Set aside on waxed paper for at least 30 minutes so that the coating will dry; roll in flour again if the coating has remained moist. Pour vegetable oil about 1/2 inch deep in a very large skillet and heat to 375 degrees. Cook chicken pieces, skin side down, until golden brown on one side, usually 5-10 minutes. Then turn and brown the other side. Reduce heat; cover the skillet and cook for 25 additional minutes or until thoroughly done. Drain on absorbent paper before eating or packing for the picnic. . Take paring knife and make slits in meat deep enough to cover garlic. Push a slice of garlic in each slit. Sprinkle meat with rosemary and pepper. Put a small metal rack on bottom of roasting pan. Place meat on rack. Do not cover meat or add water to pan. Meat is dry roasted and will be crusty on the outside and juicy on the inside. Bake in 350 degree oven until thermometer reads done for pork. . Worcestershire sauce 1/4 tsp. garlic salt 10 frankfurters 1/2 lemon, sliced thin 1/2 onion, sliced thin In skillet, cook celery and green peppers in butter until almost tender. Add soup, brown sugar, water, vinegar, garlic salt, and Worcestershire sauce. Simmer uncovered for 15 minutes. Make some light cuts in the franks then broil until lightly browned. Add lemon and onion to sauce. Simmer 15 minutes. Put franks in sauce and take to picnic . PICNIC PASTA SALAD ITALIANO Printed from COOKS.COM 1/2 (16 oz.) box med. macaroni shells 1/2 (16 oz.) box pasta ruffles 1/2 (16 oz.) box tri-color rotini pasta (spinach, tomato, etc.) 4 oz. pepperoni, sliced thin and cut into strips 8 oz. shredded Mozzarella cheese 4 scallions, thinly sliced 1 c. sliced black olives 2 sm. zucchini, cut into cubes and blanched 3 Italian tomatoes, seeds removed, diced 2 carrots, shredded 2/3 c. grated Parmesan cheese 1 (16 oz.) bottle Wishbone olive oil classics Italian dressing Cook pastas according to package instructions. Drain, rinse and allow to cool. Reserve Mozzarella, Parmesan and Italian dressing. Toss all other ingredients in large salad bowl. Add 8 oz. of Italian dressing and toss. Refrigerate 6 hours or overnight. Just before serving (or leaving for the picnic!), add the Mozzarella, Parmesan and remaining 8 oz. Italian dressing. Toss thoroughly and enjoy . POLKA DOT PICNIC CAKE Printed from COOKS.COM There is no frosting to melt before time to serve at summer picnics. 1 1/4 c. chopped dates 1 c. hot water 3/4 c. butter or regular butter 1 c. sugar 2 eggs 2 c. sifted flour 1 tsp. baking soda 1/2 tsp. salt 1 tsp. vanilla 1 (6 oz.) pkg. semi-sweet chocolate pieces 1/2 c. chopped nuts Mix chopped dates and hot water; set aside to cool. Cream together butter and sugar. Add eggs and beat until fluffy. Sift together flour, soda and salt. Add to creamed mixture alternately with date mixture. Mix well after each addition. Stir in vanilla and 1/2 cup chocolate pieces. Spread batter in greased 9x13x2 inch baking pan. Top with remaining chocolate pieces and the nuts. Bake in moderate 350 degree oven about 35 minutes. .
