You would get nitrates if you were to try making colloidal silver with
nitric acid in the water. Unless you are arcing, it is not likely.

...how about if using a high voltage arc method with an ambient air

a couple years ago i read a case that i found in, or maybe through, some
gov't site like CDC or NIH about a guy who had developed extreme constant
seizures (no rest) from silver. but it wasn't from CS at all. i think it
was some kind of occupational exposure, but i forget...this was when i was
