For root access, you only need to type sudo su. There are no passwords by default, but root is locked out from direct login.
As to your Atom eval board, if it is using the new Intel SCH, then you will need the Menlow image. If your board is using a different chipset (i.e. 945M), then you should use the McCaslin image. The main difference is in the default video driver. As to image creator, it is useful for building your own custom images, or developing applications for use in a MID environment. Use it if you want to, it isn't strictly necessary.
