I had an issue with Libreoffice 5.1.2.2 to turn auto-correct OFF for the ->. It also kept correcting -> to → , even when I had removed all the rules and turned off the auto-correction options. I entered a rule that corrected -> to ->. That worked for me, I never got the → anymore. So I think you are right about it being a profile issue with the replacement table.
