Hmm.

The only file you need to run sa-update after install is a stock 
v320.pre because you need this plugin:

# Check - Provides main check functionality
#
loadplugin Mail::SpamAssassin::Plugin::Check

Check your v320.pre or create one with just the line above and see if 
sa-update -D will work them.
