Asparagus Au Gratin 

3 pounds fresh asparagus or 3 pkg. frozen 
2 tablespoons butter or margarine 
1 tablespoon flour 
1/2 teaspoon salt 
1 cup light cream 
1/2 cup Swiss cheese -- grated 
toasted bread crumbs 

Preheat oven to 400F. If using fresh asparagus, trim spears evenly 
and peel to remove scales. Cook 10 minutes or until tender. Drain 
well. Melt butter in small pan, add flour and cook over low heat 
until golden. Remove from heat. Stir in salt and cream. Return to 
heat and stir constantly with wooden spoon until mixture bubbles. 
Cook 1 minute longer. Add cheese. Stir until cheese melts. Arrange 
asparagus in shallow baking dish. Spoon sauce over this. Sprinkle 
with bread crumbs and bake 15 minutes or until lightly browned. 

Serves 4 to 6
