I find that really annoying, but i give all the shame on thunderbird, not to the list configuration. About Elm, i don't know this MUA, but in mutt you can configure some addresses as "mailing-list addresses" and if you press R you will reply to the user and if you press L you reply to the list. I see you use mac, i don't know anything about mac world, but you can go on bugzilla, register yourself and vote for this bug.
