The quote is playing it safe. If you were coming into an unknown environment you would play it safe too. I would guess 3-4. if there are no issues. The amount of data/users can affect this quite a bit.

My boss asked me how long it should take to set up the server to be able to be seen from a neighboring Window box (so the tape backup could catch the backup), and I told him as long as it took to properly set up some file sharing system like Samba. He said that someone quoted him 6 hours, and I said perhaps, as I didn't know how it was set up originally. Just wondering what you guys thought about this.
