No matter whether you use one or two HD's the boot drive will contain
all the information that enables the system to boot to one of the
OS's.. If you partition the boot drive and install each OS on o
different partition you will have the same advantage as separate
drives. Then you could put the apps on the second drive, in two
separate partitions. Just an alternative option.
Whichever OS you install first will not have any awareness of any
other Operating Systems. Linux distros may be more likely to create a
good boot loader which will give you options as to which OS to boot
to. Generally one OS will be considered the default one and if no user
choice is made the system will boot tot the default OS.

If you want more information about dual booting I Linux group is more
likely to have such since I think Linux users are more likely to
install Linux with another OS, OR even several Linux versions.
