The answer to this kind of question always depends on what you want
to do with it. Do you want quality (i.e., PostScript) graphic output?
Do you want to see the music as you type? Etc., etc.

I have found BarFly to meet all my needs. It doesn't do PostScript,
but it does almost everything else. For PostScript, try abc4mac.
Those are the only two Mac abc packages I have any familiarity with.
They both have decent sound, although BarFly's is more flexible.
