following are my views on your quarries.

Cooking by a visually impaired is challenge one. It is not that much
difficult if she did before marage under the supervision of her family
members.
preparing thosa and rolling chappathi in a round shape is some what
difficult.  But a a roller machine was recently invented and i don't
know about its accessibility.
To make different dishes in different tastes, you can refer the websites.

sugar&salt has different smell  better you could put  these in a
different structured boxes.

Visually impaired couple can travel alone with the help of cane.  once
you started to use it, it will march the step before your feet and
help you to identify the path.
