I have done it a bunch. The only thing you have to make sure of is that you run forestprep and domainprep cleanly BEFORE you try to dcpromo the 2003 server. It will fail otherwise.
I suggest that you add the 2003 server as a member server, and verify that you can manage it from 2k ADUC. Then run forestprep and domainprep. Then run dcpromo.
