Hey Sune,
     I didn't see a reply to this, so I'll tell you what I can. Dual
core processors are fairly new, so I can tell you they'll most likely
be more expensive. As far as if dual xeons work well, I built a full
system with dual 2.8 GHZ xeons for under $1400 and it performs very
well (make sure you look into mother boards with a good chipset for
video such as the Intel E7525 chipset). Professionally I also work on
2 machines with dual 3.2 GHZ Xeons, Canopus DV storm hardware cards,
and 500GB RAID arrays. The dual processors help speed up rendering and
overall system performance, but if you really want a system that
processes video well you should also look into getting some real-time
video hardware from a company like canopus, black magic, AJA Kona,
matrox, etc. (there are plenty of options that are less expensive than
getting an Avid). If you want to get a second opinion I would suggest
checking out some of the tech. forums on creativecow.net. There are
some great forums over there.
