I just use a razor knife. I cut throught the outer jacket and into the copper, then twist a little and pull both off. Then I cut off a small amount of the outer sheath enough to expose exactly how much copper shield I want exposed. This way I don't have to be careful.
Then I remove the inner sheath using the stripper of my crimp tool. This leaves enough innersheath to prevent the copper from touching the rj45 pins. You don't fold the copper back. Instead you treat it more like putting an end on a heliax cable. Leave a bit of the inner jacket sticking out and only expose enough of the copper to go into the shielded end and get crimped down. We also qualify all ends with a fluke tester. All of our infrastructure sites for the past couple of years have been built this way. This cable is actually very easy to work with once you get the hang of it.
