+1 on Zimbra Use the open source version.
We run it under vmware, it has relatively robust CPU and memory needs depending on your account and spam volumes. Running it under vmware lets you tweak the amount of resources you throw at it on the fly. Be ready to put some time into fail2ban to keep people from hacking into accounts. Also be ready to fine tune the anti-spam tools as well. If you've been using a hosted solution until now, the spam and hacking stuff is going to take some time to get up to speed on.
