Not looking to swap hardware. If the consensus is defaults are good, I’m OK
with that.

I think a lot of the log entries I see are due to phones going into sleep mode
to save batteries, and then waking up and thinking they should still be
connected to the WiFi.

Might try a Ubnt Airrouter. It has less options and I can't even recall the
last time we had one of those i-devices with problems.

DHCP/DNS aren't really going to be a template thing - they're yours to decide.
I have always left everything MT default unless I need to solve a problem,
which is pretty uncommon.

Not looking for firewall or QoS rules, I know those are out there. More
interested in the WiFi parameters and maybe stuff like DHCP and DNS parameters.

Silly me, I assume the Mikrotik defaults should be good, and maybe that's
true. Normally the only thing I change is I bump up the DHCP lease time from
10m to 1d if it's not a public hotspot. I have heard some people suggest
things like disable 802.11b and set a minimum signal to connect.

I'm struggling a bit with homes that have a boatload of portable devices,
which are constantly going to sleep to save batteries, or moving to places with
poor signal, or leaving in the car and coming back. iPhones/iPads seem more
troublesome than Androids and laptops.
