That's exactly the way it should be. As soon, as you assign any item
to a sprint, they vanish from the backlog. The Idea behind this is
that the Product Owner is responsible for the backlog (kind of a
'wishlist') and the prioritys/business values set right. The
development team then grabs some of them for a sprint (preferably the
most important ones) and works on this sprint. The Product Owner
should not interfere with the work that is assigned to an ongoing
sprint...
