what year is the car? and what are you saying when you say you've checked

I know its sounds cliche but check for vacuum leaks, namely around the 
auxiliary air valve port underneath the main intake tube. Sometimes they crack 
there, at the joint. Suspect the auxiliary air valve itself, this part is no 
longer available. Check the idle valve port on the plenum. Make sure its not 
loose. Make sure the adjustment nut is tight. Suspect also a clogged fuel 
filter. 

And given the Australian heat down under, suspect a fried IC chip in the PCM 
(brain box) located on the passenger side footwell. If you have a spare, swap 
it out and see if the sloping goes away. 

If all else fails, take a can of tuna and throw it at the grille, 'Crocodile 
Dundee style', and see if that fixes it. Aim at the Alfa emblem! I always 
wondered why they changed those anyway.
