I personally like the ultimate vr or ultimate voice recorder as it is 
otherwise known app. the quality is customisable, and recordings can be 
automatically sent to dropbox or something like that.

as far as external mics go, there are a few to choose from. a lot of them 
however, don't have any cable, but just connect directly to the lightning 
port, which I think makes them very easy to get knocked and cause possible 
damage to the lightning port.
the main ones are the zoom ones, which I believe there are at least 2, 
possibly 3 models of, and which are nice ones, sure make one, but I haven't 
tested this out yet, and rode also make one, but unless you are going to use 
it with it's own app only, I found the pick up on it rather quiet and 
disappointing.

alternatively, another really good device, is the line6 sonic port vx. this 
is not only a stereo mic, but a good little audio interface as well. some of 
the features of it's app are not very accessible, but a good one that is, 
will let you hear the sound that you will get from it before using any other 
app to actually record. it also has a headphone socket for monitoring, which 
is great for any of the new iPhones which don't have there own.
it also has a cable, rather than being directly fixed to your lightning 
port. finally, it has a mount for any standard mic stand.

finally, if you have a larger budget, and a preferred professional mic that 
you prefer to use, you could get the apogee duet, which again, is an audio 
interface, with xlr input connections.

Yep heaps of them and I'm sure other list members have some advice on this.
I'm not really much into IOS products these days but I do plan to get one of
the new iPad Pro machines towards the end of this year and when I do an
external microphone will be on the table.
I believe many of the standard USB microphones we know of such as the Blue
Yetti can be used and I know of others that plug into a headphone jack if
you own a microphone that has such a thing.
So do yourself a favour in the meantime, do a Google search and see what you
come up with, my bet is that you'll come up with enough devices to wet your
appetite.

Something I have been wondering about for some time now.  Is it possible to
use the iphone as a high quality audio recorder?  Not with the internal
microphone of which which is of inferior sound quality but by connecting an
external microphone?  Is there iny kind of app available which you can use
to for example to set the recording quality?  I am not interested in video
at all.
