Well Shirley, This is a rather difficult question to answer as there's long been a debate in the Culinary world about the fact of Cassia Bark being sold as Cinnamon, both of which are in the same family. Depending upon the Company and the Brand they are claimed to be the same, but there are folks that denote the severe difference. I can't remember the end all be all, but should you do a web search for Saigon Cinnamon, you should get enough information to answer this, and someone else here should have some better insight to this...I shall go research this again for my own edification.
