Saigon cinnamon is intermediate between cassia and true cinnamon. It has 1 to 5 % oil. The oil only has 25 % cinnamaldehyde. I cannot find what the balance of the oil is. It might not be as effective.
Cinnamon has a thin easily ground inner bark. Cassia has a thicker starchier inner bark. Tincture of iodine will stain cassia blue. Cassia has more coumarin, which is toxic to the liver. Courmarin has a sweet smell, as in Sweet Clover, and bitter taste. Coumarin is used in perfumes, alcoholic beverages and pipe tobacco. It is banned from food. The heart medicine / rat poison coumadin is a derivative of coumarin.
