John Gyer Clarksboro NJ ========== John, bingo. Commercial maple syrup is indeed produced by reverse osmosis. Syrup is also made from birch sap in Russia, Alaska and elsewhere. It takes a lot longer to boil down and is said to have caramel overtones. Here in BC we have three producers working with Betula papyrifera. In Newfoundland, an outfit called Sap World also makes Birch wine and vodka. Here's to an intoxicating spring. May it be long and sweet.
