Two problems, one yours, one analog's.

Analog doesn't know about the %Req->headers.host% field. So you need to use
a LOGFORMAT command and declare that field with %v.

Secondly, you want just
  VHOSTINCLUDE dom1.unl.ac.uk
It must match the name in the logfile.
