Use "adb logcat" right after the boot to see in the log why the system crashed. Apps of course should not be able to make this happen, but sometimes there are bugs.
Also I thought I heard somewhere that some Droids had memory problems, so you might want to consider seeing about having yours replaced if it is crashing a lot.
