So clearly this is a bit after the fact, but if you were just worried
about 40 or so emails that were still on the phone… couldn't you just
have re-emailed them too yourself?
Maybe worth considering if it happens again, even though it is a hassle.

triggered a sync on the phone, which deleted everything in the INBOX.

Thanks for your suggestions - Google REALLY should allow exporting and
sync-direction control.

I may not be correct in this but I believe all that data is stored as
an XML file somewhere on your phone. In order to get to it, you'll
probably have to root your device then dig around to find the exact
file. You'll have the data but you won't be able to stick it back
into
GMail.
