There is no voltage regulator directly associated with the 5V AC adapter input - there are more step-down circuits attached to the power plug plus battery (via some circuits, which choose power plug or battery). If you look inside your zaurus, you could see more 2.5V and 3.3V step downs - nearly all 5 pin chips inside are step-downs (see http://www.penguin.cz/~utx/zaurus/inner_view near the CPU cover and also below the audio codec). It seems that nothing expects, that the voltage is exactly 5V. So in theory, it may work. But it is your risk. You may also want to patch your system to disable charging to not lose energy by spilling energy from one battery to another. My colleague built his own battery pack with step down circuit.
