I've also had the same issue. Once I tap on the icon it opens right away but I have a blank white background for about 5 seconds before the list of items appears. It tends to load a little faster (2-4 seconds) if you have recently opened the app. Once the iPhone goes to sleep however the load time is back to 5 seconds. Rebooting the phone doesn't appear to help. Other apps don't appear to be as slow although some of my apps take 2-3 seconds to load. This didn't happen to me until the 2.1 upgrade.
