1) Swiping to complete - If there are more occasions to delete tasks
then complete them. I would
recommend a name change to this program and call it ToDelete. I know
there
are occasions where you would delete and such a shift would not
"delete" a way
to do that. Other than deleting a task for an input error you don't
want to edit I can't see
why this would be a frequently used option. Completed tasks can be and
probably should be
archived for reference or archived to deleted as a batch.

Todo is not email. I don't see many self generating todo spam tasks. I
think context
affords the ability to relook at things in terms of their
functionality in their particular environment.
Standardization for standardization's sake could simply recreate
useless practices in a different environment.
In fact, there are many apps out there that make money based on some
silly inflexible standards (like landscape email)
In this case delete is a more drastic action than completing
something. The worse that can happen from completing a
task in this way is that item gets removed from view or added to the
completed section where it can be ultimately deleted.

2) P.S. - Totally agree with you. Calendar would be a much better
option. This is an instance where keeping standardization
across platforms is totally appropriate in my opinion. My initial need
was for something beyond one week that is easily
accessible.
