The IIgs is a nice machine, but I think that it is best used as a souped up IIe since you have most of the required hardware built in (serial and floppy controllers), more memory, and a faster processor. Oh, and you can hook up a better keyboard and have all of those free expansion slots too! As for using GS/OS: I have always felt that it is too slow to support the GUI. Some people will differ, but they are probably fond of the graphics and sound capabilities or play a lot of games (the games I saw seemed to be fast enough, but they didn't rely upon the desktop environment either).
Without an accelerator, I would agree that the GS is slow in GSOS. Especially if you are using any OS earlier than 6.0.1 on it. I have a ZipGS running at 10MHz, which makes it quite usable. If that's not fast enough, I can run Bernie on my iMac, or if I want a portable II, I can run Bernie on my old G3 Powerbook.
