There are two ways: you can either use floppy disk images to load
files on to the hard drive image (just as you would with a real
IIgs, only the disks are now files instead of physical objects).
You can either download those floppy disk images, or create them
with a real Apple II: Asimov on the IIgs, and ADT on the 8-bit
machines.  ADT also takes care of transfering disk images to your
Macintosh or Windows box.

The other approach is to use third party software to manage disk
images.  DiskCopy will work for some Macintosh emulators (IIRC,
none of the IIgs emulators).  Unfortunately, ProDOS support broke
somewhere between Mac OS 7.5.5 and Mac OS 9.0.4.  ADFS is a program
which should work on both Classic and Mac OS X, and (IIRC) it will
handle both ProDOS and DOS 3.3 disk images.  There is stuff for
Windows as well, but I'm not familiar with it.
