The problem I've had with VMWARE in the past is the actual physical boxes were not sized appropriately for the indvidual software requirements (i.e., database, ARS, ITSM applications). This would lead to performance issues and if you ran into problems you would get the standard answer from support that this is not a supported configuration. VMWare is fine for demos, development, and even testing environments. I would not recommend using it in a production environment, but that's just my 2 cents. Hope this helps.
