I do not think BMC has such a documentation. And the size, datatype etc does
not really tell you how the field is used in the application.

I use ARInside to document the complete application. It is not just a list of
all fields, it also tells you all workflow objects: http://arinside.org/

I also wrote a tool to extract this information from DEF-files:

If you are having trouble exporting the complete list of forms you can try
