You could do it with AR Utilities. This may not be the best approach but if you go to the fields tab, select the table/forms that are overlays, it will give you the list custom fields. The list will include the form Request ID (1) but that is easy to identify/exclude. OTB overlaid fields you may be able to exclude but generally you can find those by Field ID. The list can then be exported.
