I would not delete any fields. If you must, put some dummy/default data in fields for which you don't have real data. You should check the associated data validation Filters all the way through the process to ensure that you have all of the data elements that you will need all the way through the process. One way you can do that is to simply run the process with the logs on, and see where it crashed, then fix that. If you're one of those who would rather get it right the first time, you can dig into the workflow for a couple of days until you understand it well enough to get it right.
