Ron, Best practice mode DevStudio must be used to create and edit overlay, overlays are not visible in Base mode. When you add field in base mode, the field is available to overlay as well but when the form and view is overlay then newly added field is part view overlay hence it is not be seen in user area.

Whatever out of the box you see on Overlay object is coming from Base, if you delete overlay object then base object will still be intact but it's not other way round. Concept of an Overlay is to Preserve your customization during upgrade process.
