With this command the numbering and TOC is provided by dblatex (specifically the latex part), not by Asciidoc, so there is nothing in Asciidoc you can do to stop it. You can specify a role in Asciidoc to identify the table to dblatex and possibly customise dblatex to not number tables with that role, but thats beyond the scope of Asciidoc ML. You could ask on the dblatex ML if the resources in http://asciidoc.org/faq.html#_sources_of_information_on_configuring_docbook_toolchains don't help. The alternative FOP based PDF generation almost certainly could have custom XSLT to not add the numbering FO to tables with the role, but again its outside the scope of Asciidoc ML.
