>From what I've seen, for VoIP, most of the time it is "Mean Opinion Score" (MOS). A good site for testing this is TestYourVoIP.com. I also found a simple page on MOS at http://www.techabulary.com/m/mos.html. However I'm not familar how MOS scoring actually works (in terms of the algorithm it uses and such).
