One "cross platform" tool that that we use is vnc2swf:

http://www.unixuser.org/~euske/vnc2swf/

It requires a VNC server and isn't as featureful as some of the
MS-Windows or X-Window only tools (e.g. the Gnome "Instanbul" app:
http://live.gnome.org/Istanbul or "My Screen Recorder" ?? for windows)
but for simple stuff vnc2swf is great.
