Exactly.  Smartparens (AFAIR) can't deal with "parens" having more than
one character.

Yes, but what I'm talking about is (ultimately) extending AUCTeX to
support (La)TeX "delimiters".  Not every user of AUCTeX wants to use
smartparens.  Which won't help anyway. ;-)
